Well, for Packet, you need a TNC, so I suppose it's PSK-31 you want. As Patrick mentions, DigiPan is pretty much a standard and pretty easy to get going.

But then you said MFJ TNC-Microphone Switch - perhaps you have a switch that allows you to select between the mike, TNC or soundcard. In that case, Paket 6.1 is a simple packet program to get going, but to just get started, any old terminal emulator will work, including the one that comes with windoze.
